Since we were born, we’ve been told to eat our vegetables, especially dark, leafy greens. However, we don’t want every plate of food to look green. We eat with our eyes as much as our stomachs, so when we prepare dishes, we’re always looking for ingredients that will make each plate stand out.

We see a lot more colorful foods on our plate, but it’s not just because it’s visually stunning. Richly colored foods also have a higher concentration of antioxidants. Instead of letting leafy greens take all the credit, purple is starting to make its way onto our plates. The darker the color, the more nutritional. Look for blueberries, beets, purple cabbage, purple cauliflower, and purple potatoes to round out your dishes. However, be sure to mix in a bunch of other ingredients with contrasting colors to create healthy, beautiful, trendy, and delicious dishes.
